Congrats on the pie success, my mom was the ultimate pie maker and my sister inherited her desire and skill to also make good pies. I am just good at eating them.I am in a chatty mood this evening ...
Well, today didn't go quite as planned but never mind. It is quite dull, wet and windy here but there again it is autumn. I need to get around to thinking about Christmas shopping and trying to be a bit more organised.
I made my first pumpkin pie last week and it was a huge success. I need to find time to make a huge batch of pumpkin soup for the freezer. I managed to grow 3 pumpkins this year and I have them in the greenhouse at the moment but I know I can't store them out there for much longer.
OK, that is some of my up to date new - so what are y'all up to ?
I love pumpkin pie too with gobs of cream. YUMMM.It has been a bit brighter the last two days but we are definitely into the fall wet weather here. Lots of leaves turning and falling. No raking happening yet though. I have been off work with kidney infection and a cold but will try to go back tomorrow and thursday. Friday is professional day so if I have to I can just take another day off and the students won't miss out. We are still building here and the dust is horrendous. Not good for my lungs at all I am probably better off at work. Jan

Yeah it was fine. Work went quickly and I had coffee with friends afterward. One of our retired coworkers was in town so three of us got together we usually try to go up to her place during the summer for a day but just couldn't get it together this year. I have to admit though I have kind of been out of the loop and didn't realize that her mom had just passed away. I found out about it when the hostess told me discretely that the "card" was in the computer room as I came in. She is doing ok though and it was a nice visit. Jan

Does anyone have a cornbread recipe that rises more like a cake? My cornbread is too flat and I have tried changing the recipe and tryed others but I can't seem to find one I like. I just want it to not be so dry.

I have never made cornbread I think it is a big US thing as when we went to famiily camp in Washington they served it often. Good luck with finding the right recipe. Jan

Maybe if you could tell us what recipe you use others would be able to compare wth their recipes?

Ah, I see. Well I think it might be fun to try and make it from scratch? I'm a Brit and I have to make mine from scratch as there are no box mixes over here .....

Thanks to everyone for your suggestions. I will try the website and I don't have time right now to post my recipe but that is also a good idea. I hope everyone is doing ok. It's rainy here today (east NC) and looks like it will be cloudy all day.

We have packet (box) mixes but I generally steer clear of them and make from scratch. Corn bread is not widely known over here in the UK. I have made corn bread but only very occassionally.

Rob and I have been to North Carolina twice. It is lovely there !! Have you tried Tar Heel Pie? I make it sometimes when we have friends round. It is always a huge success

Oh by the way my MIL is here tonight. Her first night in her new suite. Still many things to finish but most of her furniture fits pretty well. The carpet guys that came today were awesome and really did a wonderful job. Hubby blessed them. Jan
