Sweet indulgence! These taste like heaven, like you are cheating big time and yet there is very little fat in them and not a whole lot of calories. Not bad at all - in fact they are worth saving a few extra calories through the day just to have one for dessert!

4 egg whites whipped

1/2 cup sugar

1 tablespoon vanilla

1/2 cup cocoa powder, sifted

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup flour

1 cup marshmallow creme



Preheat oven at 325º. Prepare a 9 x 13" pan with cooking spray and flour. In a mixing bowl, combine baking powder, cocoa/carob powder, salt, and flour. In another mixing bowl, combine egg whites, sugar, vanilla, and marshmallow creme. Mix dry ingredients with wet ingredients. Bake for 18 minutes.

Makes 8 servings

Marshmallow cream is just that. It's like soft marshmallow topping in a jar. I believe it's under the brand name "Fluff." Ah yes, click here for some info....

As for brownie recipes, my favourite comes from Alton Brown, the host of the Food TV programme Good Eats. These are rich, dense, fudgy brownies. Definitely not the cake variety.

Soft butter, for greasing the pan
Flour, for dusting the buttered pan
4 large eggs
1 cup sugar, sifted
1 cup brown sugar, sifted
8 ounces melted butter
11/4 cups cocoa, sifted
2 teaspoons vanilla extract
1/2 cup flour, sifted
1/2 teaspoon salt

Preheat the oven to 300 degrees F. Butter and flour an 8-inch square pan.

In a mixer fitted with a whisk attachment, beat the eggs at medium speed until fluffy and light yellow. Add both sugars. Add remaining ingredients, and mix to combine.

Pour the batter into a greased and floured 8-inch square pan* and bake for 45 minutes. Check for doneness with the tried-and-true toothpick method: a toothpick inserted into the center of the pan should come out clean. When it's done, remove to a rack to cool. Resist the temptation to cut into it until it's mostly cool.

Yield: 16 brownies

* - or lightly grease and then put in a piece of parchment, hanging over two ends. This allows the brownies to be lifted out once cool. No flouring needed.

I saw the brownie recipe. I am from the U.S. of A. and just got here in July. I have my Mom's peanut butter fudge recipe that calls for Marshmallow creme (fluff), but as of yet, I have not been able to find it. I've been to Woolworth's and looked in at my local Eastwood (Sydney) Franklins, but no luck. Do you know where I can go to buy it?
