We can, technically. According to the Standard Model (the main model of particle physics used today), 'mass' is caused by the Higgs Boson slowing particles down by proportionate amounts: all particles travel at lightspeed, and are then slowed by the Higgs Boson. The amount by which they're slowed is what we see as their mass.
Nope. Technically, all I've seen are photons. But the Higgs has strong evidence by proxy, so we'll see. C'mon, LHC!
