it was a group of mostly non Christian friends interested mostly in partying.

Oh! That makes total sense then. Not a good idea for 18 year og lignende!
Does you church/denomination have a program for short term mission?
If not, research some of the cross-denominational ones

Send her to the hospital. Get her in touch with a hospital chaplain where they pray for the sick.

Or try YWAM. They have a DTS (disicpleship training school) in Hawaii I heard. If she likes to be on a boat? They go round the pacific islands.

Theres also Uganda. I dont know if you can afford, but try amazima ministries. Especially if she loves children. Theres also Mercy Ships.

Sorry dont know if all these coincide with a spring break but ask around. I understand that in america the youth are notorious for partying once they they leave school.

Although there are mission trips to mexico. I know a church member who went on one, and also to Bolivia.

we were able to dissuade her from going to Mexico with some friends but we'd like to send her somewhere meaningful that would enhance her journey with Christ.

Far too often mission trips are simply excuses for people to take vacations in exotic locations.

If your daughter can't find a paying job helping people in one way or another, she could certainly find volunteer opportunities in her own back yard. Nursing homes are notoriously short staffed, and there is very little time to sit and just talk with the residents or help out with activities. Volunteers are usually welcomed with open arms.

There are probably food pantries, shelters, day care facilities, and other similar organizations serving the poor close by. She might be surprised at the benefit such volunteer activities would bring both to her neighbors and to herself.
