Perhaps because she was his servant:

1 Kings 1
2 Wherefore his servants said unto him, Let there be sought for my lord the king a young virgin: and let her stand before the king, and let her cherish him, and let her lie in thy bosom, that my lord the king may get heat.
3 So they sought for a fair damsel throughout all the coasts of Israel, and found Abishag a Shunammite, and brought her to the king.
4 And the damsel was very fair, and cherished the king, and ministered to him: but the king knew her not.

I thought it was because Abishag had actually become one of King David's concubine. As such, to lay with one of the King's concubine was in essence a declaration that one was taking what belonged to the King and claiming it for one's self. The significance almost seems to be like a transfer of power. (Also consider Genesis 35:22 and II Samuel 3:6-7)

What comes to mind is II Samuel 16:21-22 which states, "And Ahithophel said unto Absalom, Go in unto thy father's concubines, which he hath left to keep the house; and all Israel shall hear that thou art abhorred of thy father: then shall the hands of all that are with thee be strong. So they spread Absalom a tent upon the top of the house; and Absalom went in unto his father's concubines in the sight of all Israel."

Now that David was dead, Abishag rightfully belonged to Solomon. Solomon had let Adonijah live even though he had tried to take the throne from Solomon before. I think this let Solomon know that not only was Adonijah apparently ungrateful for having his life spared, but he still had ambitions of taking the throne.
