There are no instances where Jesus is recorded as quoting or referring to the Book of Enoch in the Gospels or other New Testament writings.
The thing people normally try to appeal to as evidence of Enoch being scriptural according to Jesus is this portion of Matthew 22:29-32:
"But Jesus answered and said to them, “You are mistaken, since you do not understand the Scriptures nor the power of God. 30 For in the resurrection they neither marry nor are given in marriage, but are like angels in heaven.31 But regarding the resurrection of the dead, have you not read what was spoken to you by God: 32 ‘I am the God of Abraham, the God of Isaac, and the God of Jacob’? He is not the God of the dead, but of the living.”"
The claim goes that Jesus is referring to Enoch here, as Jesus refers to "the Scriptures" and then says something ("For in the resurrection they neither marry nor are given in marriage, but are like angels in heaven.") that's similar to a portion of the Book of Enoch. Namely, in 1 Enoch 15:6-7, we read:
"But you, formerly, were spiritual, living an eternal, immortal life, for all the generations of the world. For this reason I did not arrange wives for you; because the dwelling of the spiritual ones is in Heaven."
Another part of Enoch I've seen appealed to is 1 Enoch 51:4, which says:
"And in those days, the mountains will leap like rams, and the hills will skip like lambs satisfied with milk, and all will become Angels in Heaven."
The obvious problem we run into is that Jesus is not
quoting either of these. There are some similar sentiments, but these aren't quotes. This would therefore, at most, say that 1 Enoch is theologically correct on these
specific matters.
As for the fact Jesus refers to "the Scriptures", there is no need to try to read 1 Enoch into this, because Jesus does offer scriptures quite explicitly in Exodus 3:6 quote. Notably, that quote is preceded with "have you not read what was spoken to you by God" to indicate it is scripture, which is not found in the earlier portion about people being like angels and not marrying.
