I thought more of the cake rack...turn me over, I'm not done on the other side! (I'm sure it was, looks ace btw)
Yes it was done. :) The cake pan just made the sides less brown. It stuck some - I think forgot to grease the sides - so some of the brown crust was cut off when I removed it. It was a perfect crumb and fully done.

Alas, we are heading into Autumn this side of the pond. My wife is a Summer girl and she is not happy (above 35°C and she comes alive)

Perhaps you might like to visit us at some time? i had an Orthodox friend in Australia other than yourself, from Adelaide, but I lost touch with him, but he and a Roman Catholic friend enjoyed traveling to the US around this time of year; I think they were the Australian trans-pacific equivalent of what we call Snowbirds (Americans and Canadians who travel to Florida, California, Texas, Arizona, and other southern US states for the winter, but not Nevada, as it is properly freezing even in Las Vegas during the winter months).

We are actually planning on heading over in late August through September to visit my daughter and son-in-law (and granddaughter) in Nashville, then will probably take a trip to Florida together.

I hope to be in Knoxville, Tennessee around that time meeting with a priest who is a dear friend of mine (you might say he is my starets or gerons) and might well go to Florida or see Nashville as I’ve never been to Tennessee. I also want to visit my favorite school teacher, who is still alive thankfully, in Mississippi and if possible visit New Orleans. By the way, you might get better air fare if you travel directly to Florida, and alternately you might consider resting in California before heading to Tennessee due to the unpleasant duration of flights to the US from Australia unless one is travelling in first or business class. Indeed when I flew in First from LAX to LHR twice, and once from LHR to LAX, and also in Club World from LHR to Accra, Ghana, on BA, in 2006 and 2008, I was disappointed when we landed. On the other hand, Club World on the upper deck of the 747 from Heathrow to Los Angeles was unpleasant, because I made the newbie mistake of reserving a seat on the port side of the aircraft, which gets massive amount of sun throughout that flight. When flying from Europe to California in the morning one should always get a seat on the starboard side, especially on the upper level of a 747 or A380 where the curvature of the fuselage results in more of the sunlight hitting you; if you are on the lower level of a 747 or on a Boeing 767 it is unlikely to be a problem.

Now, once I took a flight to California from Paris Orly on a defunct airline, AOM, which was terminating in Papeete in French Polynesia, which was a very unpleasant flight, however, we departed Orly late in the day, so most of the flight was in darkness, unlike most flights from Europe to the US which tend to happen during the day, especially if they leave in the morning, which is very common due to how aircraft are scheduled; evening departures to the US from Europe do happen but they are less common.

We currently have a cherry tomato going berserk which must have grown from discarded tomato. We also had a passionfruit vine that went nuts out of our compost heap, whereas the one we bought and planted had no interest in growing. We want to grow our own produce but have not had a lot of success.

We have some volunteer plants most years, but we hired someone to help clean out our gardens this year - and the volunteer plants are gone. Oh well! We finally got a fence around my garden, but it makes it challenging to get to the garden to weed…

Ask the priests if you can have some cotton wool with myrrh from the relics of St Demetrios. Make time to visit the catacombs beneath the Church too.

We lived in Thessaloniki for 12 years before returning to Australia. We really miss visiting the monasteries (there are at least 20 within an hours drive from Thessaloniki, and they are just the ones we know of) and of course the city has the highest density of Churches anywhere in the world. A truly blessed city.

I hadn't been to Greece before last year, and it was a real eye-opener. I can easily see myself living here.

Maybe not in a city though, somewhere quiet. If they had a place for me in a monastery within an hours drive...

(Errr....for context....I am Roman Catholic, and a vast majority of religious, especially female religious, in my own tradition (Catholic) inside the United States at least, are dying and will soon be extinct within the next 10-20 years. I'm sure there are other reasons.......)
