Technically eating leavened bread is ok. It does not intoxicate.

Leaven has always been symbolic of sin or corruption: "Then Jesus said unto them, Take heed and beware of the leaven of the Pharisees and of the Sadducees."
(Matthew 16:6)

In 1 Corinthians 5 written about a man who had his fathers wife, Paul says "
"Your glorying is not good. Know ye not that a little leaven leaveneth the whole lump?
Purge out therefore the old leaven, that ye may be a new lump, as ye are unleavened. For even Christ our passover is sacrificed for us:
Therefore let us keep the feast, not with old leaven, neither with the leaven of malice and wickedness; but with the unleavened bread of sincerity and truth." (5:6-8)
I think you are being literal in a scenario where the word usage isn’t designed to be literal. I also think there’s some confusion on your part between leavening and alcohol/intoxication and how leavening does not determine or cause intoxication.

Note Jesus is careful to say "fruit of the vine" rather than wine in this passage? Yeast is leaven, and leaven in most cases is a type of Sin. The trees along the river with fruits are fresh fruits. You won't have fermentation or decay.
Yeast is sometimes used to depict wickedness, but not always. In Matthew 13 v 33 it symbolises the Kingdom of Heaven. Also if it was sinful.why did God forbid it for only seven days in Deuteronomy 16 v 3?

I think you are being literal in a scenario where the word usage isn’t designed to be literal. I also think there’s some confusion on your part between leavening and alcohol/intoxication and how leavening does not determine or cause intoxication.

It's the yeast (leaven) in juice that creates the alcohol. It ferments over time, and the longer the fermentation, the more alcohol, but it reaches a point where it can no longer produce alcohol, the yeast dies, and the mixture turns to vinegar. The yeast doesn't cause intoxication, but it's byproduct, which is actually a waste product, causes intoxication. Yeast produces ethanol and CO2 by consuming the sugars.

I’m aware of how yeast works, I work in a bakery and bakers education. I have forgotten more about yeast than most people will ever know.

Saying leavening is sinful because yeast, if paired with sugar and aided by a microbiome of bacteria, makes something that contains alcohol is like saying that all fruit and vegetables are sinful because, if left to their own devices, they ferment and that fermentation create alcohols which intoxicate. Or ethanol fuel is sinful because that’s the byproduct of yeast with sugar that makes alcohol.

Most leavening doesn’t make alcohol and while most yeast does make an “ol” with its waste while eating, it doesn’t cause people to be intoxicated in most scenarios.

Again, you’re being literal when the passages are metaphorical. The context isn’t “leaven is sinful,” its “give rise to” or “causes” or “gives cause to.” Be aware of what fuels something, not “yeast is bad.”
