The whole point of the question of "How can Democrats win over rural voters?" is "How can Democrats get rural voters to like them enough to vote for them?" If Dems were seeking to just defeat them, they'd be looking for ways of making it hard for them to vote (like, say, shutting down polling places in rural areas) or making their votes irrelevant, like through gerrymandering.
While Dems aren't innocent on this front, over the last ~15 years, they're far and away less guilty of trying to "defeat" or "destroy" the other party's voters. When was the last time Republicans, for example, had a real discussion about how to win over urban voters?

yeah, except for those rural folks who lived anywhere near, say, a mine or other industrial facility. It isn't influxes of suburban liberals that build superfund sites or cause tailings dams to collapse.It is interesting that American rural areas are traditionally conservative and live in less polluted areas and then become polluted when transformed into suburbs by an influx from liberal places. The replacement liberal politicians & constituents then stress the need to save the planet from environmental disaster.
It's all good, as long as the working class stays politically divided.I wonder if much of the GOP cares about anybody, rural or urban, who doesn't already at least lean conservative.
