I am a Christian and I do not believe I will go to heaven, but I don't believe I won't either. As much a Jesus did not know when the End will be, I don't know where I'll end up. And I don't care, because all I care about is loving the Love (Truth) that loves me. I am already experiencing eternal peace when loving Truth.
...But atheists don't believe in anything...
They do not believe in God.
... so if they want people to switch to atheism, there is nothing to benefit from it...
God/Truth is doubtless. In that doubtlessness is peace. Those that do not believe in The Doubtless will always be doubtful. Atheists do not realize, or know how, to let go of doubt (conditionality) to become doubtless (unconditional). They fear losing control to unconditionality. They think 'control' is everything; they don't realize that unconditionality (honesty + surrender) allows Everything Real (Truth) to 'touch' them.
In their ignorance, they have become arrogant, and wish to exercise their self-righteousness on others, to gain more cohorts, in the hope to become doubtless to their own agenda.
...Like there is a benefit if you convert to Christianity - you don't spend eternity in hell, and instead have eternal peace in Heaven with Jesus...
Again, I did not become a Christian to go to heaven, or to avoid hell. I became a Christian because it is the way, the truth, and the life which is unconditionally real. It is the opposite of living the way in the dishonesty of this world.

Please be clear about this. The Christian, living the way of truth, no longer lives the way of an atheist. Both are at opposite ends. The atheist comes from the lowermost and outermost, while the Christian comes from the highermost and innermost. Total opposite references about life. We, as consciousness of honesty (truth) can move from innermost to the outermost with unconditional truth, and become untouchable. While the other cannot move from outermost to innermost without becoming unconditionally honest. Only the honest gets 'touched' by Truth. Anything not true/honest cannot touch Truth, it is not attainable by self-will (control). God/Truth is untouchable. It is because the atheist does not believe in God, they don't experience the 'touch' of unconditional love, or a taste of eternal peace; so they remain holding onto what is perishable because that is all they are willing to know, or believe in.

Random question here because it genuinely confuses me!

Why do atheists try to stop any and all religious belief? I mostly see them trying to interfere with Christian practices but... why?

For example: I can understand why a Christian would try and witness to and convert a person of Islamic faith or Buddhist faith to Christianity. We believe we will go to Heaven after death and want others to be able believe in Jesus and join us in eternal peace in Heaven.

But atheists don't believe in anything... so if they want people to switch to atheism, there is nothing to benefit from it. Like there is a benefit if you convert to Christianity - you don't spend eternity in hell, and instead have eternal peace in Heaven with Jesus.

But in atheist's minds, if they don't think anything is out there anyway, then why even bother trying to change peoples minds or get in the way of religious activities? There is no gain in that.

Is what I'm trying to say even make sense?

Because they want to feel like they are right in their thinking, attempting to support their theory. The thing is whether you know it or not it is done unto you as you believe. We are living in a righteous system where thought moves in the unseen. That is why calling things which are not as though they were works. Faith and fear moves accordingly, both are a type of faith, how one believes. Jesus tells us over and over, it is done unto you according to your faith, as you believe. So, whether an atheist believes it or not they are still thinking in a system where God's spiritual law is still in force; it is still a righteous system! Once one understands this they can correct their thinking. But, back to your question, they want to justify their stance. Fortunately, we are made in the image of God so they will have these nagging feelings within telling them there is more, much more. God bless..

I don't know that atheists "try to stop any and all religious belief." The atheists I know feel that others are free to have their own religious beliefs. Yes, they might oppose prayer in public schools are putting up a nativity scene on public property, but that is because our Constitution forbids the establishment of religion.

This has been my experience as well.
But the question would be better answered by atheists themselves.

Here you are going to get answers that no atheists believe:
Because the hate God, etc.

In most cases I’ve seen, atheists are usually arguing for cases like prayer in public school, which violates the government neither preventing nor endorsing a religion.

Or the atheist will encounter a Christian who assumes the atheist has never read the bible, which they sometimes know better than the Christian, will argue with the atheist arguments the atheist has heard numerous times, and quite frankly, is eat their lunch and doesn’t want someone trying to sell him Jesus like a used car salesman.

There have been stunts where they passed out Satanism coloring books after Christians were doing the same at a public school. There was a Statue proposed of the satanic goat for yhe courthouse after Christians wanted the goverment to endorse their religion with a statue of the 10 Commandments

unfortunately, rather than getting the joke and the point, see this as an attack on Christianity.
