By the standard you just gave, the woman should not have been fired. "the <relationship> did not affect the job and she did not brag about it to her students, therefore it should not get her fired." Your words, drunk changed to relationship.
So which is it? Should she be fired, or not? Should there be an appeal? To whom?
Let's see. A person has a private loving relationship that affect the school not all. She is fired when an anonymous tip got the school to snoop at a funeral.
In Newark, a priest fondles kids and is transferred to another school. Of course, this is documented to have happened for at least FIFTY years. But it doesn't get a mention.
There are two issues. One is which laws the Catholic Church and Catholic institutions have to obey. The other issue is the hypocrisy in the practice of the RCC with regard to sexual behavior.
There is a 3rd issue that most Catholics understand. Same-sex couples are here. They need to be served by Christ's Church, with love. The Church is not a gathering of saints. It is a hospital for sinners. We don't do that by firing this woman in violation of the law because of gossip (a grave sin if I recall).

I don't think I've ever used the word "homophobia" on this site before. It is thrown around too liberally in society these days for things that really don't qualify.
However, reading this story, and some of the responses to it, I can't find a more apt word to describe what I'm seeing.
And that's actually rather sad. We're Catholics and should live up to standards our own catechism sets for us regarding the just treatment if homosexuals. But they're gay, and therefore, scum undeserving respect, dignity, and job security. Or so it would seem.

and yeah, even though the teacher was not Catholic, being a teacher at a Catholic School means to many people she represents the Church in a real way
