As apposed to the Biblical theory of Creation there's a lot, LOT more with Evolution that's been demonstrated for the truth of the matter to be "Fact".

There have been several eras in the human culture regarding how think about the world and how to communicate ideas (from the viewpoint of our civilization block):
a) the mythological era (Sumer, Babylon, Persia...)
b) the philosophical era (Greece, Rome)
c) the scholastic era (Medieval Europe)
d) the rationalism -> scientific era (Modern Europe)
You are reading Genesis, written in the mythological era, as being written in the scientific era. You like Bible, but you make no effort to understand it properly.

There is something wild and fascinating in mythology. Thats why DC, Marvel or video games with this theme are so succesful.
Why are you surprised that people in ancient times liked it too? They would be bored with our scientific thinking.

Your rephrasing does not make sense. If you do not believe in these historical eras, just think:
a) why are there ideas like eternal waters, cosmic waters, leviathan in the sea, talking snake, man from dust in the OT
b) why are there ideas like Logos or in the NT?
Because the OT was written in the mythological era while the NT was written in the philosophical era.
If you want to ignore that the surrounding culture influenced the language of the biblical writers, you are wilfully choosing not to understand the Bible. Which is not honoring the Scriptures at all.
