The reason for this was because no codified "version" of Christianity yet existed. Every community that practiced Christianity developed their own customs and Christian traditions. It's why Paul spent so much time telling these churches how to do it right.In fact Constantine's version of Christianity actually was not approved at Nicea by the synod of bishops.
There are over forty gospels, and at least six versions of Acts. So it wasn't until Constantine provided special sanction for Christianity, and the faith properly codified by the CoN, that the religion really began to take off.
