I believe it can, but that's not to say it's a choice. When I was in my 20's I didn't generally find women over 40 attractive. Now that I am 40 I do find them attractive. I never made a conscious choice to make this shift. Similarly, I think that a person could have the the things they find attractive change drastically enough to include people of a different gender.Can orientation change?

Gender is malleable. Genetic biological sex is not malleable, but not always clearly defined, either. For some people, orientation may be malleable, for others, it may not.

Unlikely, but orientation is not at all a binary.
It is only possible to change the outward and hormonal manifestations of your biological sex; chromosomal level changes are not possible.
My impression is that it is more possible to change gender than orientation, but that an orientation can itself (but doesn't always) encompass more than a little fluidity.

I would say, then, that the two are ultimately inseparable.
Thing is, with treating what is now known as gender dysphoria, they tried initially (and for many years) to treat people by bringing the gender into alignment with birth sex. It failed. Now they do their best to bring the sex into alignment with gender and it is working as a treatment for the problem.
Gender doesn't seem to want to change (though it is not binary either), but sex can be adjusted.

If you say "I'm changing my gender", and then remove your genitals, and then say "My gender is changed", then gender and sex really don't seem to be different things, right? I'm trying to figure out, according to this paradigm, where the line is, and what is what?

As a point of clarity: It's worth noting that "identify as" is a phrase that, in practice, means "claim to be". EG, if I give you an ID card that says "Elizabeth, Queen of England", and tell you I am Queen Elizabeth, then I am identifying as Queen Elizabeth, regardless of the physical reality. Likewise, in essence, when I someone says "I identify as male", then he is claiming to be male.
