Cheese has been one of the things that I have craved since going raw. However, being a raw foodest means no meat and/or meat by products. Although, on occasion I will partake.
Well, this last Sunday I took a crew up to Kansas City so I was able to stop in Overland Park, at the Whole Foods Market (a large organic market) on my way home. It was lunch time and at every corner of the store they had little samples of varying items. Well, when I got to the deli area area I saw a cheese mixed with a tomato sauce of some sort and crackers to put it on. I took a sample and was hooked. It was sooooooo good. So I bought some and when I got home ate the whole thing. LOL At least it was organic
but my stomach let me know later that I had overdone it.
So I started thinking "I wonder if I can duplicate this with a nut cheese and of course using my dehydrater make my own crackers.
Well, I made cashew cheese today
It's really quite easy. You take a cup of cashews (almonds work too) and blend them with 1/2 cup of water until smooth. Then you pour the mixture in a jar. Cover with a lid and then put it to the side covered with a towel and let set overnight. Then you can mix in any spice that you want.
To try and duplicate the goat milk cheese that I bought I mixed in (according to taste) chives, Italian seasoning, sea salt and olive oil. It's soft and spreadable, like a cream cheese and very close to what I had the other day. Keep in the refridgerator.
I'm still experimenting on the crackers and when I get some that turn out like I like them I'll put the recipe here.
Milk can be made this way too. Here is a recipe for Almond milk. You can experiemt with cashews in the same way.

- Drain and rinse almonds. Place in a blender with water, and blend on highspeed for 15 secongs
- Strain mixture through a fine mesh strainer. Use over live granolas, in beverages, or on its own. Store milk in an airtight glass container in the refrigerator for 3 or 4 days.
