Grape juice begins to ferment as soon as it is squeezed! Set grape juice out on your counter and it will begin to turn to wine. It must be pasteurized in order to stop this process. Dr Homan and I wrote the article in Bible Review. My specialty is Historical Theology, but Dr Homan is an expert on alcohol in ancient culture. He is currently writing a book on Christianity and Islam and alcohol.
