Why was the punishment for sin so harsh ?

It just seems like the one sin of Adam and Eve , that lead to the fall of human kind is not justice.

they rebelled against God. God gave them specific instructions and they CHOSE to disobey God in spite of what God had said. it's not so much how many times they sinned or what the sin was. sin is sin. the point is that they sinned against God. period. and this is the price of sin:

Romans 6:23
For the wages of sin is death; but the gift of God is eternal life through Jesus Christ our Lord.

We did not make that choice Adam and Eve did,

we make the same choice they made every time we choose to disobey God: to be led of self instead of being led by God.

we were born with a sinful nature because of them - because of their decision to disobey God. that is why we are in need of salvation:

Psalm 51:5
Behold, I was shapen in iniquity; and in sin did my mother conceive me.

we were born into sin. that is why we have to be born again:

John 3:3
Jesus answered and said unto him, Verily, verily, I say unto thee, Except a man be born again, he cannot see the kingdom of God.

and why could God not just forgive them.

because the wages of sin is death (Rom. 6:23). IOW, the penalty or the punishment of sin is death. so Someone (Jesus) had to die in order to atone for the sins we've committed against God, and only through His shed blood can we receive forgiveness for our sins.

He knew they where going to sin, why did he put the tree there as a temptation. It just seems that the punishment does not fit the crime.

Genesis 2:15 tells us why God placed man in the garden:
And the Lord God took the man, and put him into the garden of Eden to dress it and to keep it.

that is why man was placed in the garden of Eden - to dress it and to keep it, NOT to be tempted by God. and God did not place the tree there as a temptation to them. God does not tempt us (James 1:13). it wasn't until AFTER the serpent came and ENTICED them that the tree became a temptation to man. up until that point the tree was not even a temptation to them. if God was trying to tempt them, then there would've been no need for the serpent to seduce them. they would've given in before he would've even had a chance to entice them. temptation is of the devil, not God. God does not tempt us to sin against Him:

James 1:13-16
Let no man say when he is tempted, I am tempted of God: for God cannot be tempted with evil, neither tempteth he any man. But every man is tempted, when he is drawn away of his own lust, and enticed. Then when lust hath conceived, it bringeth forth sin: and sin, when it is finished, bringeth forth death. Do not err, my beloved brethren.

It might not be justice in our eyes, but it was in God's eyes.

In Genesis 4 it says that "Then men began to call on the name of the LORD." So I assume that people were worshiping God. We are not told that God never forgave Adam and Eve. And you are right, we did not make the choice that Adam and Eve did, but have you noticed, that we don't live a righteous life and that we do sin. If we never sinned then we would be blameless in God's eyes, like Christ, but because we sin, it is no different from Adam and Eve disobedience to God in the Garden of Eden.

One can only wonder why God does what He does. God did allowed the tree there but He did not force Adam and Eve to disobey Him, that was their choice. And the punishment didn't fit the crime, because of Adam and Eve's sin, Christ had to die. But oh thank God for Christ's death, because of Him, when we come to Him, baptized into Him, we have salvation, and we are reconciled back to God the Father and can have a relationship with Him.

God doesn't punish. Sometimes we just have to live with the results of our decisions.

Romans 5:12 Therefore, just as through one man sin entered the world, and death through sin, and thus death spread to all men, because all sinned.

When one man sinned, God thought of all who would descend from Adam as having sinned, also, since Adam was our representative.

James 1:13

The tree of the knowledge of good and evil represents human autonomy, that is, self-rule and an assumed independance from God in all areas of life. It is probably assumable to conclude God placed the tree in the midst of the garden as a test. Many Scriptures reveal that God sometimes sends trials as a means of testing.

Perhaps the punishment was harsh. However, Adam had disobeyed God's commandment and listened to his wife instead of the voice of God. Understand the consequences of disobedience. Adam never really confessed for His own personal sin. Instead, he blamed his wife and God. And the woman shifted the blame to the serpent. We see in Exodus 32:33-35, He can blot out their sin and that only at their request. This shows the importance of individual, personal repentance. If the call to repentance is continually ignored, God's judgment must consequently fall.

God is perfect justice, as well as perfect love. His holy character requires that He judge sin. God exercises His sovereignty in abundant mercy, not in strict justice. God is sovereign. His decision is final.

i dont believe Gracchus is a Christian according to his faith icon.... so all those examples you've given of God punishing probably doesn't mean anything to him

I do believe that we die because of our own sin, remember however that God searches hearts and imaginations and anything falling short of His commandment to love Him and everyone is a sin. The word 'sin' is an archers term of the same era of the Israelite's Exodus, the word means to miss the mark. So when you read that all have sinned and fallen short of the Glory of God, you should read it as meaning that we have missed the mark of the Glory of God.

As I have been studying the Bible, I have yet to find anything where we are even to worry about anything in our own lives, not one single thing and to do so is falling short of the Glory.
