Why is Jesus referred to as the Word? What is the significance? I can understand 'son of god' and such, but what does it mean to be the Word, and how exactly is the world created through the Word?

I believe it's because He is the Way, THE TRUTH, and the Life.
It seems whenever the bible speaks about the 'word' it's in reference to 'truth'...
(Psa 119:43) And take not the word of truth utterly out of my mouth; For I have hoped in thine ordinances.
(Psa 119:142) Thy righteousness is an everlasting righteousness, And thy law is truth.
(Psa 119:160)
The sum of thy word is truth; And every one of thy righteous ordinances endureth for ever.
(Pro 8:7)
For my mouth shall utter truth; And wickedness is an abomination to my lips.
(Pro 22:21) To make thee know the certainty of the
words of truth, That thou mayest carry back words of truth to them that send thee?
(Joh 1:14) And the Word became flesh, and dwelt among us (and we beheld his glory, glory as of the only begotten from the Father), full of grace and truth.
(Joh 8:32) and ye shall know the truth, and the truth shall make you free.
(Joh 14:6) Jesus saith unto him, I am the way,
and the truth, and the life: no one cometh unto the Father, but by me.

But when the Comforter is come, whom I will send unto you from the Father, even
the Spirit of truth, which proceedeth from the Father, he shall bear witness of me:
