k i'm prolly the only 17yr old guy who has ever posted on recipe exchange in the history of CF but....... i take care of my 4 younger siblings and i get stuck cooking for them every night after school and sports. usually i just bring something home from el pollo loco or something, but when i do cook the only thing i can make is carne asada, arroz con pollo and maybe tacos or mac n' cheese. i don't have a lot of skills in cooking and i don't have a lot of time, but i'm sick of having to settle on fast food bc it's so unhealthy. my brother and sisters really like chicken. is there any quick and easy recipes for chicken that you guys can share? thanks in advance!

Hi and welcome!! :)

One of our favourite quickie meals is Chilli, Chips and Cheese :)

Make up a recipe of chilli, which is easily done by frying onions in a pan, adding minced/ground beef and a couple of tins of tomatoes. Add the seasonings or chilli powder to taste.

To serve - we use oven chips/fries as a base and add the chilli on top and then top with grated cheese.

To use up left over chicken we like Chicken Fricasee:

chop up left over chicken into chunky pieces.
fry onion, add celery if liked, peppers and a handful of frozen peas. cook until the onion is transparent and soft and then add the chicken. Stir well and add a can of Campbells Condensed chicken soup + plus part of a can of water, stir in gradually until you reach the consistency you require. A full can of water might make the recipe too watery for you. Bring to the boil and then turn down the heat and simmer gently, stirring frequently while you cook the rice. By the time the rice is cooked the sauce should be thoroughly heated thru'.

Another recipe?


take a can of Spam or similar (I use a can of chicken) and dice. Fry onions in a pan with just a tiny bit of oil, until the onions are turning brown, then add the Spam and a can or two of baked beans. Heat gently once the Spam is added or you might burn it. Serve with mashed potatoes. :)

As you like chicken you might like to try wrapping one or two rashers of bacon round a chicken breast fillet - should work out as one fillet per person. Anyway, put the wrapped fillets in a dish or baking try and cover with a lid or foil and cook for about 35-40 minutes and serve with potatoes, whichever way you like them and veggies:)

A quick easy recipe that I call chinese chicken is one of my kids favorites

make a mix of bbq sauce,/ ketchup,/ salsa and a bit of vinegar some soysauce and spice it the way you like (5-spice seasoning spice a must, just a pinch of that)
garlic, onion salt etc
add enough water to make it just over 4 cups

cut up a chicken and simmer it in the sauce for 1/2 hr. covered,

add 2 cups of brown/converted rice
simmer another 1/2 hr (no peeking)

add a bunch of chopped up broccolli the last 15 min

a meal in a pot :D

Have you thought about jacket baked potatoes? We love them and one of our favourite fillings is bacon, mushrooms and cheese.


The potatoes can be baked in the microwave or oven. We generally zap ours in the microwave while the oven is heating up. Either way, make sure you pierce the potatoes before you cook them 'cos it can be pretty messy if they explode.:eek:


The skins won't go crispy in the microwave. In a conventional oven they will take about an hour depending on how big the potatoes are.


To make the filling just grill the bacon and take off the rind, chop and fry the mushrooms and mix with grated cheese and then warm through for the cheese to melt. Split the potatoes down the middle, fill and enjoy. :) There are loads of other fillings for baked potatoes if you are interested.

Ok, this is going to sound wierd...but it's really easy and really yummy you have to try it....Take some chicken breast and put them individually in foil then add a bit of Miracle Whip to them then fold them up into little pockets and bake in a 350 degree oven for about 30-45 minutes and serve over rice(we like brown) and with a side of veggies....we usually have broccoli and cheese or zucchini and onions with this one.

I don't know what your definition of 'quick and easy' is, but if you like spicy dishes, I found this one online awhile back and it is pretty simple IMO.

4 boneless skinless chicken breasts
2 tablespoons butter
1 tablespoon minced garlic
1 tablespoon pickled jalapeno peppers, minced
1 tablespoon pickled jalapeno pepper juice, from jar pickled jalapeno pepper
1 (10 ounce) can cream of mushroom soup or cream of chicken soup
1 cup shredded monterey jack cheese
1/2 cup milk
pickled jalapeno pepper juice
salt and pepper
  1. Trim chicken breasts of fat and cut into bite-sized pieces. Saute in a large skillet with butter and garlic until cooked through and browned.
  2. Add minced jalapenos and liquid. Saute until fragrant and pan is fairly dry.
  3. Add soup, milk, and cheese. Simmer until heated through and cheese is melted. Add more milk or jalapeno liquid as desired to thin sauce.
  4. Serve over spaghetti noodles.

I have 2 chicken recipes that are fairly quick to make..

1). Seasoned coated chicken strip wraps.

In a freezer bag or zip-lock bag add flour, salt, pepper, garlic powder, onion powder and any other dry herbs you wish to use. Cut 2 chicken breasts into fairly thick strips and place in the bag with the flour and spices close the bag then shake untill all the chicken strips are coated. Fry the strips in a shallow pan until golden brown then serve on tortilla bread with salad vegetables.

2). Creamy mustard and mushroom chicken.

Cut one medium sized onion into small pieces and fry in a pan until golden add 1 to 2 teaspoons of crushed garlic. Add 2 cups of button mushrooms sliced to the pan with the other ingredients and cook until soft. Cut 2 chicken breasts into cubes and add them to the pan also and cook until golden in colour. Add a full small carton of sour cream (over here that is 250mls) and 2 heaped tablespoons of either french, german, or dejon mustard and stir until the sour cream and mustard have combined to make a sauce do not over cook take off the heat once it is heated thoroughly. Serve with either pasta or rice or as a filling for baked potatos in their jackets.
