It's probably most compassionate to be vegetarian but there is no law regarding what to eat or not in my understanding of Christianity. I think Paul made that clear. The "Old Testament" law is for the psychic or carnal man not the pneumatic who is free in Christ.

The law is spiritual.

When Paul talks about us not being under the law he is speaking of the OT law of ordinances (don't eat, don't touch, etc..) though. The law of love is something different all together.
