Paul is talking about the "eating and drinking" that is done on those days (with respect to).

Good point!

I also see the word (shadow) as placing Paul's list of things in a category separate and apart from the seventh day of creation.

The context of Colossians also magnifies the word (shadows) and places them in a ceremonial category having to do with the sacrificial system. The sacrificial system, along with its many sabbaths, was instituted as a result of sin long after the seventh day of creation. Sin is defined a breaking God's Law. The seventh day is part of God's Law and is protected by God's Law. If you violated a shadow you might get spanked but if you violated the sacredness of the seventh day you were to be stoned to death.

Jesus is Lord of THE Sabbath but He is the fulfillment of the shadow sabbaths.

A shadow points to something in the future. Once you learn what is producing the shadow the shadow becomes less valuable. The seventh day Sabbath is a memorial of creation. It testifies of the reality of God as it points back and memorializes God's creative power loving provider. Once you learn what the Seventh day Sabbath means it becomes more valuable.
