I made simple enchiladas last night. Just beef, cheese, tortillas, and sauce. I also tried some instant rice and bean package, but it didn’t taste very good. I don’t know what to make tonight.

Atrocious. She doesn't eat what we eat, but a rotation of a very small range of options.

I used to be one of those "I will never cook two meals" parents, but then autism laughed at that.

I occasionally give the kids a second option, but it is almost always a variation of the main food I’m cooking. I can’t do the multiple meals thing.

They were so excited one time because I messed up dinner and was making chicken nuggets because they love chicken nuggets. They then decided not to eat them because they were “too juicy.”

I’m making chicken vegetable Alfredo today. It made me think of @Bumble Bee. Maybe your kids would like a version of that modified to their tastes? Mine will have blackened chicken and some garlic and pepper flakes in it along with various vegetables but I thought this is a fairly simple recipe that could be kid friendly.

If the kids like tacos, taco pasta might be an option. It’s easy enough to tweak to the kid’s taste and pretty easy to make. I know my nieces and nephews like it. It’s a quick and easy meal and kid friendly from my experience. Look it up and you can make it according to your kid’s tastes.
