Christmas Rainbow Poke Cake

2 baked 8- or 9-inch white cake layers, cooled
1 pkg ( 3 oz) raspberry flavor Jello
1 pkg (3 oz) lime flavor Jello
2 c. boiling water
8 oz. Cool Whip, thawed

Place cake layers, top sides up, in two clean 8- or 9-inch layer
pans. Prick each cake with fork at 1/2 inch intervals.

Meanwhile, dissolve each package of Jello separately in 1 cup of
the boiling water. Carefully pour raspberry Jello over one cake
layer and lime Jello over the second cake layer. Chill 3 to 4 hours,
Dip one cake pan in warm water for 10 seconds (usually a bit longer);
then unmold onto serving plate and top with about 1 cup of Cool
Whip. Unmold second layer carefully onto the first layer. Frost
top and sides with remaining topping. Chill and keep leftovers refrigerated

My family loves this AND it is beautiful!

Pistachio Cake
1 package yellow cake mix
1 package pistachio pudding (instant)
4 eggs
1/2 cup oil
1 cup club soda
1/2 cup nuts (optional)

Beat all ingredients except nuts for 4 minutes
Stir in nuts
Bake in 2 (8 or 9 inch) pans for 20-25 minutes at 350°
Let layers cool before frosting
Frosting
8 oz Cool Whip
1 package instant pistachio pudding
1 cup cold milk
Beat all ingredients well
Frost cake and refrigerate 1 hour before serving

Mountain Dew Cake
1 box orange cake mix
1 box instant coconut pudding
1 can Mountain Dew
4 eggs
1 cup oil

Mix and bake at 325° for 45 minutes
Topping:
1 large can crushed pineapple
1 stick margarine
1 1/2 cup sugar
1 can Flake coconut
5 Tbs cornstarch
Cook until thick. Pour on cake

Old Fashioned Peach Cake
(Easy and delicious)
1 Pkg. Yellow Cake Mix
1- 1 lb 5 oz. can of peach pie filling
3 eggs
1/2 tsp. lemon extract
Topping

1/2 cup sugar
1/2 cup flour
1 stick butter
1/2 tsp. lemon extract


Pre heat oven to 350 F.

Mix all batter ingredients on low for about 1 minute till mixed, then beat on high 2 minutes at medium speed

Spread batter in a greased and floured 9x 13 baking pan or glass dish. Mix topping together and sprinkle over batter.

Bake at 350 F 40-45 minutes

1 pkg. yellow cake mix
1 large package instant vanilla pudding mix
2 tbs. poppy seed
1 tsp. vanilla
1/2 tsp. almond flavoring
4 eggs
3/4 C. Wesson Oil & 3/4 C. sherry wine

Mix ingred. & beat for 7 minutes

Bake in tube pans greased with oil for 45 - 50 mins. @ 350º

Glaze: One cup confectioner's sugar combined with 1 tbs. milk. Beat well.

I found one that I served today that is quick and good. I did make the homemade frosting but you could use whatever type of frosting you like. This frosting was delicious!

Chocolate Pumpkin Cake





  • Vegetable oil spray for misting the pan
  • 1 package (18.25 ounces) plain German chocolate cake mix
  • 1 can (15 ounces; 1 3/4 cups) pumpkin
  • 3 large eggs
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup cinnamon chips
  • Cinnamon-Chocolate Cream Cheese Frosting (see below)
  • 1/2 cup chopped toasted pecans

1. Place a rack in the center of the oven and preheat the oven to 350 degrees F. Lightly mist a 13- by 9-inch pan with vegetable oil spray. Set the pan aside.



2. Place the cake mix, pumpkin, eggs, cinnamon, and nutmeg in a large mixing bowl. Blend with an electric mixer on low speed for 1 minute. Stop the machine and scrape down the sides of the bowl with a rubber spatula. Increase the mixer speed to medium and beat 2 minutes more, scraping the sides down again if needed. The batter will be thick and should look well combined. Fold in the cinnamon chips until well distributed. Pour the batter into the prepared pan, moothing it out with the rubber spatula. Place the pan in the oven.



3. Bake the cake until it springs back when lightly pressed with your finger, 35 to 40 minutes. Remove the pan from the oven and place it on a wire rack to cool for 20 minutes.



4. Meanwhile, prepare the Cinnamon-Chocolate Cream Cheese Frosting.

5. Spread the frosting over the cake in the pan with smooth, clean strokes. Sprinkle the pecans over the top.

  • 1 package (8 ounces) cream cheese, at room temperature
  • 8 tablespoons (1 stick) butter, at room temperature
  • 1/2 cup Dutch-process unsweetened cocoa powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • 4 cups confectioners' sugar, sifted

1. Place the cream cheese and the butter in a large mixing bowl. Blend with an electric mixer on low speed until well combined, 30 seconds. Stop the machine. Add the cocoa powder, cinnamon, vanilla, and 3 3/4 cups of the confectioners' sugar. Blend with the mixer on low speed until the ingredients are moistened, 30 seconds. Add more sugar if the frosting seems too thin. Increase the speed to medium and beat until the frosting is fluffy, 2 minutes more.



2. Use to frost the top and sides of the cake of your choice.

I have one my family loves, but it is more of a brunch thing than dessert...it is yummy though.

Honeybun Cake

1 pkg Yellow Cake mix
3/4c. Vegetable oil
4 eggs
8 oz. container of sour cream
1 c. brown sugar
1 tbls cinnamon

Icing

2c. confectionary sugar
4 tbls. milk
1 tbls. vanilla

In large mixing bowl, combine cake mix, oil, eggs and sour cream. Stir by hand approx. 50 strokes or until most lumps are gone. Pour 1/2 batter into ungreased 9x13 glass pan. Combine brown sugar and cinnamon and sprinkle over batter. Spoon in remaining batter. Swirl with knife to mix.

Whisk together icing ingrediants, ice while still warm.

ETA...forgot to add cooking instr.

Bake at 325 for 45-60 minutes.


My kids love this on Sundays.

Those cake doctor books are really good.

Is that a Cake Dr. recipe? I thought I saw one by that name on their site.

That does sound good and easy!

I've seen some recipes you make from a cake mix that actually seem like as much work as baking a cake from scratch. I'm really looking for recipes which can be made quickly by just adding a few different ingredients to a mix. I think I'll try this one. I know my sons love the cinnamon swirl cake mix.

Chocolate Chip Pound Cake

1 box (2 layer) yellow cake mix (DO NOT follow directions on box)
1 small package instant vanilla pudding mix
1 small package instant chocolate pudding mix
4 eggs
1/2 cup vegetable oil
1-1/2 cups water
1 package (12-oz.) chocolate chips

Mix all ingredients together. Pour into a greased Bundt cake pan. Bake in preheated 350 degree oven for 50 to 60 minutes.

CHOCOLATE CHERRY CAKE
1 box Duncan Hines devil food cake mix
1 tsp. almond extract
2 eggs, beaten
1 can (16 oz.) cherry pie filling

Mix well and bake in 9 by 13 greased and floured pan at 350 degrees for 30 minutes.


ICING
1 c. sugar
5 tbsp. margarine
1/3 c. milk
6 oz. semi-sweet chocolate bits

Bring to a boil first 3 ingredients, stirring constantly. Let boil 1 minute. Remove from heat. Stir in 6 ounces semi-sweet bits. Stir until melted. Pour over cake.

CHERRY DELIGHT

1 can cherry pie filling
1 box yellow cake mix
1 1/2 sticks oleo or butter
1 can coconut, shredded
1 can pineapple chunks & juice
1 c. pecans
9 x 13 inch dish

Layer filling, chunk pineapple. Add box cake mix and oleo. Sprinkle with coconut and pecans. Bake at 300 degrees for 45 minutes.

CHERRY CHEESECAKE

1 pkg. Pillsbury lemon cake mix
1 c. water
4 eggs
1 pkg. (8 oz.) cream cheese, softened
1/3 c. evaporated milk
1 can cherry pie filling

Generously grease and lightly flour a 10 inch tube pan. In a large mixing bowl combine dry cake mix, water and eggs. Blend and beat as directed on package. Pour about half of batter into prepared pan. In a small mixing bowl, beat cream cheese and milk until smooth. Spoon over batter. Bake at 350 degrees for 50 or 55 minutes until toothpick inserted in center comes out clean. Cool in pan 15 minutes do not invert. Remove from pan. Serve with remaining cherries. Store left in the refrigerator.
