Can anyone explain to me why the Jewish people use unleavened bread for Passover?

Because HaShem told them to on the first Passover. They were to have some ready for when they left Egypt

read the story of the exodos, and some of the laws that were later on given to the Israelites in the desert. It explains everything perfectly.

Ex 12:15 - Show Context Seven days shall ye eat (matzah) unleavened bread; even the first day ye shall put away leaven out of your houses: for whosoever eateth (khametz) leavened bread from the first day until the seventh day, that soul shall be cut off from Israel.
