Veggies, if one wants them cooked - well they shouldn't be cooked as when they are they lose most of their nutrients and vitamins - it's better to just heat them through vapour using, for example, a steam flower. When veggies are 'vapoured' (is that a word, lol), they don't lose too many nutrients and remain crunchy.

The idea of eating veggies is to eat their nutrients, vitamins and fibers.... ;)

Mmmm... I've seen a couple of studies claiming that the higher heat involved in steaming actually kills more nutrients than gentle boiling or frying... ever noticed it's near-impossible to get scientists to agree on 'facts'? :)

But yep, I prefer gentle heating for most of my vegies... I usually go organic too. I grew up with a lot of home-grown vegies, and just can't get used to standard supermarket fare :x
