For breakfast we had overnight oats (Irish oats cooked overnight in the crockpot) with blueberries and milk. Liv eats blueberries by the pint these days which is totally fine as they are in season and reasonably priced (and local!)

For lunch we had grilled drumsticks, salad and then we went out for frozen custard.

DH is working tonight so Liv and I will probably have potato salad, grapes and whatever else we choose!

Tonight I am making one of my favorite meals. Its easy, fast, cheap and delicious!
I make these stuffed italian shells. I get the jumbo pasta shells, cook and set aside, and I cook my hamburger meat, then add spaghetti sauce, but not too much. I then mix in parmesean and mozzerella cheeses, then stuff the shells. I usually make boiled cabbage or some other green vegetable, and definitely have to have the garlic bread. I love this meal!

For dinner last night we all had ham, mashed potatoes and spinach. The night before we had spagetti and meatballs.

For breakfast this morning we'll all be having shredded wheat cereal with whole milk and a little sugar..

YUMMM these posts are making me hungry.
I made baked chicken breasts and rice pilaf
then I ate a lot of leftovers.
Then last Fri. I made apricot glazed pork chops and zuchinni/tomato casserole, and I am still having leftovers.
sheesh my kids and husband are so picky.

Not all of our stores have a big variety, but we have one that does, and I usually find them by the "unusual" hot cereals like Uncle Sams, Ralston Wheat and some other hot cereal varieties. But they take a long time to cooks, so I like the crock pot idea a lot.

Oh...supper tonight, cinnamon raisin french toast, eggs, bacon, iced mochacinos for hubby and I and fruit smoothies for the kids (we bought one of those Magic Bullet blende/grinders....it works GREAT!)

Dumb Question: what's the diff between Irish oats and rolled oats?
Can I get Irish oats in USA?
I buy Quaker brand rolled oats or quick cooking oats

Irish oats are also called steel cut oats--they are oats that haven't been rolled yet You can do regular rolled (old fashioned) oats in the crockpot too, but use a 1:1 ratio of oats and water. Quick oats are just rolled oats that have been chopped up--they make a gloopy mess if you try to cook them overnight.

(I used to run a retail natural food coop, so I've got a head full of grain trivia, lol!)

last nights dinner: baked pork loin, broccoli and rice. nothing special, but filling!

for breakfast: hard boiled egg, raisin toast and a cup of mixed fresh berries (strawberries, raspberries & blueberries).

Lunch: peach yogurt w/almonds, graham crackers, & a Reeses PB cup!

breakfast: vanilla yogurt with smart start cereal in it

lunch: I didn't do lunch today (I know... bad me)

dinner: probably macaroni with broccoli in it

It's just be and the babe this weekend... no need to fuss and make a big mess with a fancy dinner
