This recipe really saved me tonight (getting low in the kitchen). And my toddler liked it!
The recipe calls for:
>1 bag/16oz frozen mixed veggies
>2 cans tuna (drained)
>1 cup instant (uncooked) rice
>1 can cream of celery
>1 cup milk
1 cup goldfish crackers
It's basically just tuna & rice, with a few other things tossed in.
I didn't have a bag of frozen veggies, so I sub'd leftovers from the fridge. Instead of cream of celery, I had to use 2 packs of chicken gravy. I also added a little shredded cheese.
You mix it all (but the crackers), microwave for 6min, stir, nuke it for 6-8 more, then add the goldfish. It looked a little less-than appetizing, but when I tried it, it really surprised me. And after a promise that daddy would stand on his head if the munchkin would try it, he did and liked it.
