I'm curious when the name "Orthodox" started being attributed to the "hurch of the east? I know the name Catholic was used to describe the church from very early on but I'm curious when we started using Orthodox specifically. Also I've seen somewhere that we are officially titled the Orthodox Catholic Church...is there truth to that?

at some point after the Schism to contrast those who give God correct glory (us) from those who don't (Rome).

and yes, we are the Catholic Church, Rome is not.

I believe Orthodox means right worship and right belief. Before the east/west split, I believe the emphasis was on “Catholic” in the West, while it was “Orthodox” in the East. After the split, the designations became more distinct although ( as has been said) the Orthodox Church is also the Catholic Church stemming from the basis that we retain right worship and belief in the Gospel of Jesus Christ.
