Stuffed Squash

I just found a new favorite recipe… stuffed acorn squash! It takes 45 minutes to make, but it is so good! Perfect for fall, too… it has acorn squash, sausage, and apples. Delicious!

I had to adapt it and use beef because I had no sausage on hand. I also ran out of onion. I added some extra seasonings to try to make up for it. I want to try it again with sausage.

I've been intending to put a stuffed squash dish in the menu as well. Acorn is probably the best option since zucchini has gone out of season. My kids prefer a ratio of more stuffing than squash.

I made it again, with sausage this time. There was no Italian sausage at the store, so I used regular.
