BEEF STROGANOFF (8 servings)
  • 6 ounces fresh mushrooms, sliced
  • 1 onion, chopped
  • 1/4 cup butter
  • 2 pounds lean ground beef
  • 4 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 2 cups beef broth
  • 1 cup sour cream
  • 1 (12 ounce) package egg noodles, cooked and drained
  1. Saute mushrooms and onions in 2 tablespoons of butter or margarine until soft and remove from pan.
  2. Add additional butter or margarine to the pan and melt. Add ground beef and cook until browned. Add flour and salt and sti well. Add beef broth and cook all until slightly thickened.
  3. Add mushrooms and onions, then sour cream. Heat to simmer. DO NOT BOIL. Serve over cooked egg noodles.

  • 1 1/2 cups uncooked spiral pasta
  • 1 pound boneless beef sirloin steak, cut into 1/8-inch-thick strips
  • 1 tablespoon canola oil
  • 1 medium onion, chopped
  • 1 medium green bell pepper, chopped
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 1/2 cups water
  • 1 cup reduced-sodium beef broth
  • 1 1/2 teaspoons red wine vinegar or cider vinegar
  • 1 teaspoon paprika
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon caraway seeds
  • 1/4 teaspoon pepper
  • 2 teaspoons all-purpose flour
  • 1/4 cup cold water
Cook pasta according to package directions. Meanwhile, in a large nonstick skillet, stir-fry beef in oil for 4-5 minutes or until browned. Add onion and green pepper; cook and stir for 2 minutes. Stir in tomatoes, water, broth, vinegar and seasonings. Bring to a boil. Reduce heat; cover and simmer for 15 minutes. In a small bowl, combine flour and cold water until smooth. Add to skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Drain pasta; stir into beef mixture. :thumbsup: :yum:

Beef Macaroni Goulash​



1 lb. ground chuck​
1 onion, chopped​
1 bell pepper, chopped​
1 tsp. salt​
1/2 tsp. black pepper​
1 can sliced mushrooms​
15 oz. can tomatoes​
1 tsp. garlic powder​
1/2 lb. grated cheese​
12 oz. pkg. elbow macaroni​
1/4 cup Canola oil​
cooking spray​



Cook macaroni in salted water & drain. Heat oil in a large skillet. Add meat, bell pepper, & onion. Cook until meat is done. Drain & add salt, black pepper, sugar, garlic powder, mushrooms, & tomatoes. Stir in cooked macaroni. Spray a casserole dish with cooking spray. Pour mixture into prepared dish & bake at 350° for 20 minutes. Top with grated cheese & continue baking until cheese is melted & lightly browned.

2 lb round steak, cubed
2 tbsp butter
2 tbsp water
2 tbsp flour
1 beef bouillon cube
1 cup sour cream
1 cup mushrooms
salt, pepper and paprika, to taste

Brown round steak in butter; remove to casserole. Make paste of flour, water and paprika. Cook in skillet. Add sour cream and remove from heat. Add mushrooms, salt and pepper. Combine with steak in casserole. Cover and bake 1 hour at 350. Serve over rice or noodles.

Easy Hamburger Stroganoff

1 lb. hamburger
1 onion, diced
1 clove garlic, minced
1 can cream of mushroom soup
1 cup sour cream
4 tablespoons milk
salt and pepper, to taste

Brown hamburger in large skillet with onion and garlic. Drain out fat and add soup and milk. Simmer for 5 minutes. Add sour cream and heat through without boiling. Add salt and pepper to taste, and serve with egg noodles or rice.

Beef/Mac Goulash

1 lb. lean gr. beef
4 slices of bacon
2 c. elbow macaroni
1 small onion,chopped,
1 small green bell pepper chopped
1-8oz. can tomato sauce,and 1/2 can of water
salt and pepper to taste
Preheat oven to 350. Cook macaroni according to directions on pkg,but not completely done as you will be baking it. Drain.While mac. is cooking,brown gr. beef in large 12" non-stick skillet with onion and gr.pepper. When browned,drain any grease,add salt&pepper and tomato sauce and water,simmer 15 minutes. Spray a 2 1/2 qt. casserole with non-stick cooking spray,such as PAM. Stir drained macaroni into beef mixture in skillet,mix well. Pour all into casserole dish,cover with bacon strips and bake at 350 for 20 minutes. We like baked potatoes and corn with this dish.
