Are there any low-carb lenten recipes?

For lent Low carb is not really the best way to go. Do a search on glycemic index. Following a diet that's richer in fiber, and with carbs that are digested slower is the way too go if you're watching your figure during lent.

The glycemic index rocks! I try to eat carbs that are lower in glycemic index! Lasts longer and you don't get that "tired feeling" throughout the day.

I know, and weight loss isn't a pressing issue with me, I'm just not anxious to gain any. But I've been getting tons of fiber lately and it has been kind of upsetting my stomach, so I thought I'd try some low-carb stuff instead.

MMMhmmm It's a complete lifestyle change for me, but it works like a charm.

Ummmm..............to gain weight you need to eat foods that are high in fat and choose more of the "bad carbs". Those would be the ones that are not high in fiber and are like the white rice, white pasta, white breads, etc., etc.
