Obviously, if people sin, then there is sin in the world.
What's more, most Christians would say that not everybody's sin is forgiven -- see e.g. Matthew 12:32: And whoever speaks a word against the Son of Man will be forgiven, but whoever speaks against the Holy Spirit will not be forgiven, either in this age or in the age to come.
I think what you're doing is playing semantics. Yes, once we're forgiven, God no longer looks as us as sinful individuals. But we're still a slave to sin here on earth. Paul was bothered by a thorn in the flesh and that wasn't a physical condition in my opinion. I think there was a certain sin he had that bothered him and Christ said, "My grace is sufficient for you." We're going to still sin and feel guilty and have the physical consequences of sin. We can still grieve the Holy Spirit and have God turn away from us. God even said that He'll let us go to our sins so that we may still turn back and save our soul, even if the body is ravished.
Satan still tempts us. If it doesn't matter, then why are we tempted? Why do we feel guilty? Why do we try to change and better ourselves? Why would Satan put in the effort to do something that doesn't matter? It does matter because sin still has its earthly consequences. And if it still has consequences, then sin hasn't been destroy entirely. The sin nature is still in us, but we're helped by the Spirit to try and turn away from that sin.
You can't call a dog a pony. Sin is sin.
