This would then go against free will, God gave us the free-will to believe or not, that is our choice. What we do with choice is what matters. Jesus said 'I am the Way, the Truth and the Life.No one comes to the Father except through Me' [Jn 14:6 - NKJV]. You have probaly heard this verse many times and others to go with it. At the end of the day it comes down to faith. I do not think that there that many people in the world that do not know about Jesus, and those that do not know I'm sure they will be looked upon God kindly. As Christians it is a part of our faith to let others know about Him, His father and the ultimate sacrifice upon the cross, so there is always the oppertunity for those who do not know yet to find out. This also comes down to the free-will that God has given us.

So those who lack the ability to think and make decisions for themselves are safe? So original sin is the ability to think and reason and therefore doubt/rebel against God? Couldn't he just strike us all dumb and solve the problem completely? Make us into animals again basically?

That misunderstands what the problem is. We are created to be images of God in and for creation - that's what being fully human is all about - and creation needs us to play that role and do it properly. Making us less than human doesn't solve the problem.
