Nicholai of Japan
Seraphim of Sarov

those are the ones that came immediately to mind, I'm sure that others will arise by thinking about it a little

Yes, in fact, St. Elizabeth of Hungary was my patron saint in the Roman Catholic Church. When I was chrismated into Orthodoxy, I received two patron saints as I needed all the help I could get. It took two Orthodox Priests to bring me to Orthodoxy. My two patrons are the Theotokos and St. Elizabeth, the mother of John the Baptist.
