Hi there, I'm a SAHM looking for some good recipes. I have a little time on my hands to do some cooking, but I'll have a lil' three year-old in the kitchen with me! :) I'm not an awful cook, lol*, but Hubby & I both are getting tired of the same old stuff. My usuals are meat loaf, tacos, sausage and perogies, chicken and gravy over biscuits, pizza, taco pizza, and skillet meat loaf. I have a few others, but these are our staples, what we eat nearly every week!

I love recipes you find in Church and Fundraising recipe books! Does anyone have any good recipes they could share? Desperate for something new! :)

Stroganoff is a good one.You need round eye or [bless and do not curse][bless and do not curse][bless and do not curse][bless and do not curse].cut in sections like 1/2 inch slices and skillet them in 2 tsps olive oil/margerine or butter.for the 2 of you about 2 cups of meat would do. add a cup of mushrooms while the meat cooks ON MEDIUM HEAT,STIR CONSTANTLY,onion if you like.(small onion sliced) as the red of the meat is cooked away,add a cup of sour cream,1/4 cup ketchup and continue to cook..add some water about 1/4 cup if it gets dry..continue to simmer until the meat is to your liking.DONT OVER COOK OR FRY THIS TO DEATH. boil egg type noodles for 12 minutes.drain and add the meat mixture,sprinkle dill seed all over it,add some more sour cream or a few tablespoons of milk and serve it with garlic bread and salad.its great the next day too.

Chicken can be made so many ways, and it is an easy meal to cook (for me anyway). I like to slow cook chicken in the oven, on the stove, or an electric skillet. I always use broth to nearly cover it, and let it simmer for about three hours. All one must do is make sure the broth stays at that level, so checking it peridically is all the work you need to do. The electric skillet works best because the temperature stays constant. Anyway, just brown the chicken pieces first, after seasoning the chicken, and after that, add broth that has been heated in the microwave. You can also season the broth with your favorite herbs and spices, and then pour the broth in the skillet with the browned chicken, and then bring the broth to a boil, and then set the skillet to simmer. Cover. It's that easy. It results in super tender and juicy, yet flavorful chicken. You can do this with beef too.

INGREDIENTS:

  • 1 pound lean ground beef
  • 1 small onion, chopped
  • 1 (1 ounce) package taco seasoning mix
  • 1 package ranch dressing (original)
  • 1 small can rotel tomatoes
  • 1 (15 ounce) can of diced tomatoes
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 (15 ounce) cans kidney beans, drained
  • 1 (15 ounce) ranch style beans
  • 6 cups corn tortilla chips
  • 1 cup shredded Cheddar cheese
  • 1/2 cup chopped green onion
DIRECTIONS:

  1. In a skillet over medium heat, cook beef and onion until beef is browned; drain. Place beef mixture in slow cooker with taco seasoning, ranch mix and all canned goods. Cover, and cook on Low 2 hours. To serve, put a handful of corn chips in each bowl, and top with soup, cheese, and green onions.

Star Ruby, at what temperature do you slow bake your chicken at?

I had a crockpot, but in our last move the ceramic inside broke. Ugh! But I'm headed out to buy one here come payday! Lol* Thanks again everyone!
Today I tried something new for lunch for me and the kiddo, we had piggies in a blanket! I found a recipe using Bisquick Mix on their website! They were so cute, lol* My daughter had a lot of fun helping me too, she got to squish some dough and she held the pan for me while I got the oven ready. Lol*

Corndog Casserole
Make your favorite cornbread recipe or use a box mix & add chopped onion, sliced hot dogs & cheese. Bake as usual. Serve with catsup & mustard.

Homemade Hamburger Helper
1-1 1/2 lb ground beef, browned w/
onion & garlic to taste
add 1 cup uncooked small shell macaroni
one can of cream of mushroom soup w/half a can of milk
salt & pepper
pour into 9x9 pan. Top with cheese, I use American cheese slices.
Bake 375 for about 30 mins, or until cheese is as desired. You could probably just simmer on top of stove like Hamburger Helper.

Easy Pork Chops & Carrots
Season chops with salt, pepper, garlic powder, thyme & brown in non-stick skillet. Add baby carrots & a little water. Cover & simmer until carrots are done & chops are tender...about 20 mins.

Meatloaf Burgers
1 lb ground beef
chopped onion & garlic, to taste
about 1TBSP Worcestershire Sauce
about 1-2TBSP catsup
salt & pepper
Mix all together (I use a potato masher) & patty into burgers. Fry in olive oil...everything is better in olive oil! I don't have any trouble getting them to stay together, but I use a saucer to help press out the patties & only turn once. Serve on a bun w/hamburger condiments.

Steak & Gravy
Cube steak, seasoned w/salt, pepper
Cream of Mushroom soup-I use a big can for 4 steaks
1/2 soup can of milk
Brown cube steak. Mix soup & milk in a bowl & pour over. Cover & simmer until meat is done & tender. Uncover & thicken if necessary. My youngest loves the "gravy" over plain white bread.

Macaroni, Beef & Tomatoes
Boil one pkg rotini
Brown 1 lb hamburger & season w/salt & pepper, garlic
Add large can of chopped tomatoes to browned burger & toss with cooked pasta. You could pour into a casserole, top with cheese & bake, but I usually just sprinkle Parmesan cheese on my serving. Hubby eats plain & the kids do whatever their mood dictates.

Here's some quick receipes I do...and if you haven't invested in a crock pot do so....ahhhh...I love them....mine is a lifesaver sometimes and the receipes you can make can feed an army:

I got this one off the food network months ago on a commercial and it is wonderful.

PARM INCRUSTED CHICKEN BREASTS:
Chicken breasts
Mayo
Parm. Cheese (I get the kind in the canister you can shake)
Ital. bread crumbs

spread mayo over chicken breasts, sprinkle lots of parm and bread crumbs over top and bake...kind of tastes like it is fried...but is delish!

VEGGIE SOUP:
Either two big cans of mixed veggies or one bag of frozen (kind with okra is great)
Two cans of big tomato sauce
One packet of onion soup mix
Two chicken breasts..boiled and shreaded...I do this sep. to make sure chicken is fully done.
1 cup of chicken broth
mix all in crock pot together and let cook all day.

YOU CAN USE CHICKEN OR PORKCHOPS FOR THIS ONE:
Two cans of cream of celery
One can of cream of mushroom
One bellpepper
Baby carrots
Potatoes cut up
onions or onion soup mix
Mix all in crock pot and let cook for at least eight hours....the gravy makes a great soup the next day.

CHICKEN AND RICE:
Rice
Two chicken breasts..boiled and shreaded
Chicken broth
Salt and pepper to taste
Butter
I usually boil my chicken...when done I shread and save the broth...I also use one box of off the shelf box....I boil the rice usually two cups of liquid per one cup of rice...add chicken this process..about a half a stick of butter...keep a close eye on it make sure it doesnt dry out...you can add water if you run out of stock...I do this on the stove top....you can make alot..you dont need any other sides cause it is filling.

Oooohhh. I'm going to try this. My sister used to make parmesan crusted chicken except she fried it...too much work for me & I don't like getting anything on my hands(I'm weird about that & my foods touching each other on the plate).

A real easy one I use is:
1 box of beef flavor rice a roni
1/2 lb. ground beef
Make rice a roni as directed
fry grround beef chopping it
drain
and mix together
use your favorite vegs.
It makes a lot!!! My husband uses it for lunch the next day or brings the rest to the firehouse where he works and everyone loves it! Quick and easy!!


Take chicken breasts
fri them in bread crumbs and butter
while fring them , make spagetti or another pasta
put fried chicken breasts in baking pan ,
put mozz over it
put sauce over the whole thing
put in oven on 350 for 15 mins
take spagetti and mix with sauce
( I make a salad, and have Italian bread )
quick and easy!!!

Sorry I took so long in responding...family emergency...

I have lost my slow cooking book temporarily, but what you do for the oven is to bake it at the same temperature as you want the inside done temperature to be of the particular meat. It should be wrapped in aluminum foil, or in a covered dish. It can cook for any length of time... 3 hours to 24 hours. The longer it is cooked, the more tender it becomes. I'll try to dig up that book, and see if I can get an exact temperature for you, but if you have inside done temperatures in your basic cook book, usually there is a chart there for the different types of meat. It is excellent for pork, especially. You need to cook any beef or pork meat for one hour at 400º to kill the surface bacteria, and then lower the oven to the inside done temperature for the meat, and cook it for the length of time you want. For chicken you need to brown the pieces in a skillet on the stove to kill the bacteria, and make it look good for serving. You can also do this for beef or pork so it is braised to keep the juices inside for more moisture. The baking temperature will be something like 275º - not very high temperatures. High temperatures toughen meat.
