In those days saw I in Judah [some] treading wine presses on the sabbath, and bringing in sheaves, and lading asses; as also wine, grapes, and figs, and all [manner of] burdens, which they brought into Jerusalem on the sabbath day: and I testified [against them] in the day wherein they sold victuals. Nehemiah 13:15

My absolute favorite scripture about the Sabbath is found in Isaiah 56:2-8 because it speaks of how anyone (Jew or non-Jew) who keeps the Sabbath will be blessed. In this passage, the non-Jew is referred to as "the stranger".

When is the next time the Sabbath is mentioned after deutronomy?

The real Sabbath, the Thousand Years, is spoken of after Deuteronomy in regards to Joshua - representing Jesus, symbolically - leading people into the Promised Land. The real Promised Land was not that, but of the future Promised Land the Lord spoke of.

The real "rest", which the Father often spoke of with Moses and Joshua.

This is why you see in Revelation the Millennium spoken of after the trumpet blowing: trumpet blowing foreshadowed by Joshua at Jericho. (And it is no mistake that was ordered by the "Commander of the Troops of the Army of God", just as in Revelation you see great strivings between the Lamb and the wicked powers, between Michael, the leader of the armies of Heaven, and the powers of Satan.)

So the "rest" which God swore the first generation would not enter, nor Moses, because of their sins was not speaking of the mere land of Israel they were entering but the future true Promised Land Jesus - a type of Joshua, who is Jesus, would lead the spiritual children of Israel and Judah to.

Now that true Promised Land, the rest, the Seventh Day - at the end of seven thousand years - that God would bring Moses into. We see this for why else would the "144,000" be singing the song of Moses and the Lamb?

some one pointed out to me that there is no reference to the sabbath after Deutronomy for 100's of years. they use this as a defence of the sabbath not being mentioned in Genesis, or before exodus.

Well, the fact remains that sabbath is not mentioned in Genesis, or before the Exodus from Egypt.

The fact that God made a covenant with the COI proves that sabbath should have been kept from that time until the covenant is no longer in force.
