Nor What the Orthodox embrace. Nor did they believe it was purely symbolic. But somewhere in the middle. I do not know who is correct.

The Orthodox believe absolutely in the bread and wine becoming Christ's body and blood, by the power of the Holy Spirit. We just don't try to explain it - which is basically what the doctrine of Transubstantiation is, an explanation of something we are content to call a Holy Mystery.
