Here's a nice little recipe for any backyard cookouts.

Boil little red potatoes. After they've been boiled, let them cool. Quarter the larger ones, half the small ones.

Add:

Red (or white if you prefer) onion
Celery
Mustard
Parsley, Basil, Oregano
Salt and Pepper
Mayo

Mix all of these until it tastes good (a little more mayo than mustard is more common).

Enjoy!

I'm glad to find another recipe using Mayo and Mustard!! LOL.....the only two things I add are a couple chopped up hard boiled eggs and a few diced up DILL pickles. I hate sweet pickles and the tartness of the dill really adds a little kick to the salad.

Potato Salad just isnt potato salad without the hard boiled eggs.
To add a different flavor and texture to my potato salad I use yello or whit sweet potatoes. It's such a nice contrast to have that little sweetness mixed in with the regular potatoes. Especially good with really hot items. yum :yum:
