I still love to see the entry of Santa Claus via the Macy's parade. While the parades are on, I start my meal. After it's all cooked to sit down with my family and have a nice meal together. With both girls so busy and my busy schedule we don't have a lot of time to eat together...this will be nice.

I think while he was living my father was the greatest Christian mentor I had. He exuded the love of Christ in all he did. Through all of his trials and difficulties he still had such great faith. He inspired me to never quit.

I think my favorite meal is steak, baked potato and a salad. I had a great one when I was in Texas at the Texas Roadhouse :yum:

The meal that I do best on is my lasagna. I don't pre-cook the lasagna noodles.

Let's see....lasagna noodles, spaghetti sauce (I make mine with Italian sausage), ricotta cheese, egg, Italian seasonings, parmesan cheese, mozzerella cheese and salt & pepper.

Make your favorite spaghetti sauce (I do it a bit runny since I don't pre-cook the noodles). While that is simmering away, mix the ricotta, egg, parmesan and seasonings. Put a little of the spaghetti sauce in the bottom of the pan, then a layer of noodles, 1/2 the sauce, spread half the ricotta/parmesan on top of that then half the mozzerella. Repeat the same for the second layer. I cover mine with aluminum foil, bake at 350 for about 45 minutes then remove the foil for another 15-30 minutes. Let it sit for about 15 minutes and you have it. BTW, this is what I fix for Christmas diner.
