Many Christians disagree on some things, but how do I "know" what I should follow and believe?

I know that many Christians, even within the same church and denomination, and I'm sure many on this forum, have different beliefs about certain subjects. How do I "know" what I should follow and feel what is right for me?
My recommendation is to read the Bible yourself and study it. Then you know that you will be making the best decision and will have studied enough to feel confident. There are many tools now on the internet that allow us to study more than we ever have been able to. My favorite is Bible Hub: Search, Read, Study the Bible in Many Languages which has parallel Bible (a bunch of different translations all on the same page, with commentaries too). It also has an Interlinear option which takes you to the original word used in the Bible. These help a lot.

The simple truth is that those who do not study the Bible do not want to know more and choose to let someone else decide their theology for them. But we will all be held somewhat accountable by God for what we did or did not spend time doing. It is also a very interesting study. Some think the Bible is boring, but once you start getting in to the culture and what was going on during each time period, it is not boring at all. There is always something interesting to learn.

In my opinion, the moment you use the word 'should' in your thought process, you create too many walls between yourself and the answers you seek.

What does spirituality mean to you?

Once you begin to understand God in a way that brings you, personally, peace and security in your beliefs - you're on the right track.
