I'm into eating simply these days. Mono-meals almost with just a salad added but they can be used as side dishes too. Cauliflower, broccoli and cabbage are the first things I want to get back into the habit of eating. Because they are the main dish for me they have to be delish.
(Sorry I don't have the link for the first 2 recipes. They were desktop notes from the net somewhere.)

Vegan Gluten-free Whole Roasted Cauliflower
Preheat oven to 400 F
Remove leaves and bottom of stem and wash whole head of cauliflower
In a large bowl, mix coating:
•
Zest and juice of 1 lemon or lime (organic if possible)
•
1 tablespoon chili powder or paprika
•
1 tablespoon curry
•
1 tablespoon garlic powder
•
1 tablespoon ground cumin
•
1-2 teaspoons sea salt
•
1/2 teaspoon ground black pepper
•
1 cup Veganaise (or 1 1/2 cup coconut or soy yogurt + 1 tablespoon olive oil)
•
1/2 cup coconut milk (if using yogurt, omit coconut milk)
Mix very well.
Place whole cauliflower in bowl and cover entire head with coating. Place coated head in glass
pan and place in oven for 50 minutes. Watch for a nicely browned top. If your cauliflower is
large, you may want to cook several minutes longer. Again watch for top browning.
Remove from oven and let stand for 10 minutes
You can use the extra coating for pasta. Try brown rice pasta with chick peas and raisins and sauce

Cauliflower Steaks (or green or red cabbage steaks)
1 head of Cauliflower
I used a medium size one
Remove the leaves
Cut the stem even but not into the florets and leaving the core on.
Using a sharp knife cut the Cauliflower in Half
Cut a slice down the edge of the Cauliflower florets so that you have 2 flat sides
Save the extra Florets for Cauliflower Rice, Salads, Roasting etc..
I attempted to make this 2 times previous trying to get 3-4 steaks and each time the florets fell off.
I have seen videos where people get anywhere between 2-5 Steaks. I also wanted mine thicker and they did not fall apart.
Brush one side of the Cauliflower with EVOO
Season to your taste with:
Salt and Pepper
Garlic Powder
Smoked Paprika
Heat a Grill pan to medium temperature
Brush with EVOO
Place the two Cauliflower Steaks seasoned side down
Brush the other side with EVOO and sprinkle on more Seasonings
Cook for about 3 Minutes or until golden brown and some grill marks.
Turn over and continue to cook for another 3 minutes
Spray a Cookie Sheet with Cooking Spray
Place the Cauliflower Steaks on the Pan
Place into a Preheated 425* oven
Bake 10 Minutes
Remove pan from the oven
Brush the Cauliflower Steaks with any sauce of your choice
I used Sriracha Sauce for my Husband which is Low Carb
For mine I used Trader Joes Sriracha Roasted Garlic BBQ Sauce which is not low Carb
Cook for 10 minutes more
If they are still firm cover with tin foil tented and place back in the oven.
Mine took just a total of 27-30 minutes to be done.
Depending on the size you cut the Cauliflower will determine how long they need to roast.
Sprinkle with some Parsley and serve.

And my new personal favorite that's easiest of all and sooo good. Use either cauliflower or broccoli
Cut 1/2 lrg cauli or one lrg broccoli into florets (I add trimmed leaves of cauli for the calcium content and the trimmed stalks of Broccoli)
In medium pan pour in
one can full fat coconut milk
1/2 can water
curry powder (I use lots of medium curry powder)
tsp of organic turmeric
1-2 tbsp nutritional yeast for cheese flavor
salt and pepper
honey abt tbsp
plus florets
Stir to cover well. Bring just up to boil. Turn heat way down, cover and cook 6 minutes. 2 servings
