It's still good, even if we are fasting/abstaining. :angel:

I thought we might could share some meal ideas here for those (like me) who are getting into a fish rut. I'm not talking about going crazy and exotic, just simple recipes or ideas that you and your family use that others might not. :) I posted this one yesterday in another thread, but it's so easy and yummy I'll use it again.

Cold spaghetti noodles
Chunks of veggies (I like zucchini, broccoli, onion, and mushroom)
Shrimp, crab, or tofu (1in cubes)
oil
Teriyaki sauce (or whatever you like or have, plain soy is fine or worstershire)


Heat a bit of oil in a skillet, enough to coat the bottom and sides

Put in veggies and shrimp or whatever and saute until nearly tender

Put in noodles (remember they should be cold/I usually butter mine too before I chill them...keeps them from sticking together)

Pour sauce over top and stirfry until noodles are hot



And on non-abstinence days you can use beef, pork, or chicken in this, too. :)

My favorite thing is tuna melts.

You take 2 cans of tuna, 2 cups of cheese, 1/3 cup chopped olives, 1/2 cup mayo, some pepper, and some chopped celery... just estimate I am not always good at measurements. Maybe throw some onion in, too that might be good.

Mix it all together and spread it on hamburger buns. Wrap the buns in foil and bake them at 350 for 20-25 minutes, or until they have enough 'doneage' for you.

You can also use english muffins. They're easy to make and really yummy too. :)

That's about my style of cooking, too. :)

And, of course, the Filet-O-Fish.

I may have to try Michelle's recipe sometime - the tuna melt sounds really good.

- mixed bag of finely chopped vegies (I use onion, soya, carrot, white cabbage and leek)
- vegie burger
- wok pasta
- sweet and sour sauce

cut vegieburger in pieces
heat oil in pan and add vegieburger, fry. Put in vegies and fry while stirring.
Add water and wok pasta or stirfry pasta (if not available, cook pasta and add after it's cooked).
Heat up sweet and sour sauce seperately.

Spoon mixture of vegies, pasta and vegieburger on plate. Add a small dish of sweet and sour sauce.

I find those jar sauces like alfredo sauce are a big help when you are trying to keep it simple. You can add shrimp, crawfish, crab meat or vegetables fi you don;t like seafood and heat the sauce and cook the seafood/vegetables together at the same time and serve it over your favorite pasta.

Or if you're like me and need to be careful with grains:

Cook shrimp, add marinara sauce with vegetables and heat until simmering. Top with a little goat cheese or Laughing Cow Lite. Serve over whole wheat pasta or spaghetti squash. Or put inside/on top of an omelette.

Veggie burgers rock. I love Boca's veggie burgers. They're low in fat, high in protein and mmm good for you:thumbsup:

Well noone in my family is Catholic, so the closest thing we fix is frozen breaded "fish."

Breakfast was granola and blueberries. Lunch was yummy butternut squash ravioli stew. (Y'all might really want the recipies to that!:) ) Dinner will be linguine w/ red sauce, a caesar-type salad (french dressing, ceasar is too garlicky fir the baby).

It's not that hard for me to make Fridays meatless- as I have cooked without meat most of my marriage. If I make something with meat it is out of the ordinary.

You could even use Boca crumbles and make some yummy tacos. Or we sometimes use a can of black beans and heat them up with half of the seasoning packet for tacos.

Oh - there's always cheese and onion (or bean) enchiladas. Get 2 cans of enchilada sauce- heat corn tortillas 6/ time in the microwave (you wrap up in a moist towel). Dip them one by one in a bowl of 1 can of sauce fill with shredded cheese and diced onion, roll up and place seam side down in a Pam sprayed 13x9 baking dish. When they are all in there (makes usually12-14)- dump the other can of sauce evenly distributing it. Bake uncovered in a 350-375 degree oven for 30 minutes or until hot and bubbly. If you want chop some lettuce and tomato to put on top with some sour cream once you've served 'em up on the plate. Serve with some brown rice if you want.....
