First, I have to tell you that this is one issue in which there are differing opinions. There are two major schools of thought, and I'd be happy to share them with you. Either way, you must understand these would not be Zombies- at all. Not like Wasting Away, not like Dawn of the Dead, not like Resident Evil.
1. As I stated above, these would not be zombies, but rather live people. Note the key phrase: "raised to life." another term for zombie? The Walking Dead. Doesn't sound like the description given here. However, this school of thought concludes that this resurrection occurred at the time of Christ's death. It believes that firm believers in the Messiah, those who had been looking forward to His coming, were raised from the dead and began spreading their stories.
2. This school of thought is much more logic and science based, and tends to take Scripture with a grain of salt. However, they believe that since there was an earthquake, the tombs must have opened as a result. Furthermore, they go on to say, people were often thought dead when they were not. Thus, these people were shocked away, wandered around and finally returned to the city.
Regardless of which school of thought is correct, the fact remains that you would not be looking for a report of zombies- You would need to find a report of a sudden population swell. The reality is that such a swell may not have been great enough to catch the attention of anyone not specifically focused upon Jesus.
However, having said that, there are several mentions by Josephus, Ticitus and Pliny of an uprising in Jerusalem about the chronological time of Christ's death; an earthquake; and civil unrest.
So, in answer to your question, there are no historical writings regarding "Zombies," but there are for the events surrounding the raising to life of these people.
