I don't get how to 'access' my heart

I've always wonderend how to look deep inside my heart, and think what it's truly saying.

God has access to my heart, but it seems like I don't! (a half-joke there)

what do you do to access your heart?

There is a practice among ascetics called "the prayer of the heart." They practice what you are looking for. However, their practice should only be done under the guidance of a spirituual father.

For us "mortals", I suggest you begin by praying Psalm 51, David's Psalm of repentance. Within this context, ask God to show you what "sin is ever before me."

Also, fasting, always in combination with increased prayer, is a good way to begin to see into your heart.

I never thought about fasting to know my heart better, it makes a lot of sinse though. I'll have to do that.

simply listen to the small inner voice of the Holy Spirit within you instead of are voice or the devils voice, the holy spirit will show you the way to your heart, sorry if I step on anyones toes , not man. You listen to the Holy Spirits voice within you by the peace that is in you from the Holy Spirit, not counterfieted peace by are emotions, if you wait on the Lord then true peace remains, Where peace is within you is the Holy spirit, If theres no peace behind your thoughts or any thoughts that come from the enemy then its not the Holy Spirits voice, The holy spirits voice always has peace behind it, no confusion etc, the holy spirit speaks to our spirits not our brains. So i am saying this he will show you the way.

Gareth, while we wait for an answer on how fasting will help, here's something that should definitely help you.
When you pray, get yourself into the state of mind for communicating with God. Personally, I do this by reciting the Lord's prayer in a whisper. Then I just talk, out loud, but whispering, and it flows pretty freely. It's personal, so I wont share it, but it involves how I feel about my relationship with Him, things like that. And then I'm just quiet, not really thinking anything, just letting myself be in His presence as it were, and that's when we have a real heart to heart!
