You can, but you don't have to. You can ask for their intercession in prayer and keep pictures of them around to remind you of your "family" in Christ.

You could although candles normally symbolize specific prayers so if you have a specific intention for which you wish this saint to pray that would be a good idea. You can pray to God thanking him for the wonderful example they are. Simply speak with them. Chaplets and litanies are always nice. The veneration of images is also a rather common practice. and of course marianservant's suggestion is a great way.
