Because goods were originally 'homegrown' usually, or acquired locally,
I am willing to bet that in many places, say scriptoriums on the Greek Islands,
that sheepskin was used, at least for Christian 'parchments'.

I haven't investigated this thoroughly myself, being more interested in papyrus.
I will see what I can find!
