One thing I have found to be most helpful is just paying really close attention to nutrition information on labels of products. This morning, for instance, I was pleasantly surprised to find that the chocolate soy milk in my fridge contains as much calcium and more vitamin c, vitamin d, and iron than regular dairy milk does.
Also worth noting is the protein content in meat replacements such as Boca and Morningstar Farms veggie burgers, veggie hotdogs, chick'n nuggets and patties, etc...

Yep..read lables. You'll get used to it. It won't hurt to take a multivitamin too if you are concerned about getting enough nutrients. Aim to eat healthy...eat a colorful diet...lots of green, red, orange veggies and fruits. Eat lots of beans and grains and soy. Cut back on white foods (white rice, bread, sugar, etc.)..these have very little nutrition.

Most people are surprised to learn that a vegetarian diet is very easy to maintain and stay healthy. One of the biggest myths is that protein is only found in meat. I would suggest buying a book for vegetarian beginners but unless you like to read and go into great depth on the subject I would buy a small book that covers the basics------in fact rather then a book there is gobs of info on the internet just do a search.
