What type of format are you interested in, if you wanted to do it yourself? My Aunt pubishes her children's stories through a publisher and uses the spiral-type binding process which is rather expensive through the publisher, but which Office Max or Office Depot does cheaper. You can make a "master copy" and print it yourself at a lower cost, and have them bind each copy you print.
You can also go the format of a chapbook, center-stapled binding which is much much cheaper. Your computer program if you have Word and or your printer options will change the page print to portrait and will do collating as well.
The two stores I mentioned will collate and print for you from a master copy- but that is also something you can do yourself. I used to use my own paper and that lowered the price as well. (since I bought reams cheaper at another store than theirs...lol)
I used to do that when I published my zine, and had them available on consignment with the Tower Books in my area.
By the way - if you go to church, you can make this book into the spiral bound type through a publisher that helps with the printing if the book is being used as a fundraiser. You'd have to check the community services in your neighborhood - as where I live, they had a recipe book make that was sponsored by various neighborhood businesses.
lastly - if you're near a library - check out last year's editions of Writer's Market - or see if they have the new edition available for reference; they had a whole list of Christian publications; magazines and small presses as well - a lot of which would accept short stories
