  • CF has always been a site that welcomes people from different backgrounds and beliefs to participate in discussion and even debate. That is the nature of its ministry. In view of recent events emotions are running very high. We need to remind people of some basic principles in debating on this site. We need to be civil when we express differences in opinion. No personal attacks. Avoid you, your statements. Don't characterize an entire political party with comparisons to Fascism or Communism or other extreme movements that committed atrocities. CF is not the place for broad brush or blanket statements about groups and political parties. Put the broad brushes and blankets away when you come to CF, better yet, put them in the incinerator. Debate had no place for them. We need to remember that people that commit acts of violence represent themselves or a small extreme faction.

I don't use a recipe, but I make it all the time. Mash up an avocado with a fork, add a pinch of sea salt, fresh ground black pepper, a little chopped cilantro and some lime juice to taste. Mix it all up. That's it for basic guacamole. If you want to dress it up, add a little diced tomato, white onion and jalapeno, but not too much, you don't want to overpower the avocado.

For very basic guacamole that only ingredients I use are avocados, cumin and lime juice. Like HiredGoon I mash up the avocados with a fork, but then I add a generous amount of cumin and some fresh lime juice to taste.

I almost always add a fresh diced tomato with the seeds and juiced removed as best I can. To do that I start by cutting the tomato in half, then poke a finger into the seed cavities over the garbage and shake out the extra juice and seeds. But thats just me, I want very thick guacamole thats sweetened with tomato chunks.

The hardest part of guacamole, I think, is finding just right ripe avocados. If I had a solution to that I'd give it to you but I don't, sorry.

I do the same, but I put in alittle ground cumin and fresh garlic.

I make it by whizzing up an avocado, lime or lemon juice, small onion, and skinned tomato in a blender. If I have any coriander leaves, I may add some too. I don't like it hot, but it's easy to make it spicy by adding a few drops of tobasco or chilli oil.

Sorry for that title <smirking>. A really EZ recipe is to just mash your avocado up and add the salsa of your choice to it then stir it up. The acid in the tomato will keep it from turning brown. The way I usually make it is with no recipe but just add the juice of one lemon to one mashed avocado then add salt and garlic to taste. If I am in the mood I will also add cumin and/or cilantro. Now you have me hungry to go buy some chips and make some myself :yum:

That's just mashed avocado, though, and not guacamole :)

If I'm just mashing avocado, I like to combine it with Creme Fraiche (and lemon juice).

Guacamole Autentico

Ingredients
  • 4 ripe avocados, peeled, seeded
  • 1 tsp ground cumin
  • 1 ripe, medium Roma tomato, seeded, diced
  • ½ Cup minced sweet white onion
  • 2 serrano chilies, seeded, minced
  • ¼ Cup chopped cilantro leaves
  • 4 Tbsp fresh lime juice
  • Hot pepper sauce, sea salt, white pepper to taste
Instructions
  1. Cut avocado in large chunks and mash coarsely in large bowl with a fork. Add remaining ingredients and blend gently - leaving some small chunks is fine. Taste and adjust seasoning with more pepper sauce, salt and pepper if desired.
