I recall discussions about not eating meat in the D&D - so I figure this is a good place to ask for some tasty non-meat recipes.

Do you have any to share? :)

BTW, do you folks like potlucks like the Baptists do? :)

That sounds interesting. I haven't tried tofu steak.

When not eating meat, I have used various nuts or cheese.
Soy is a great option for some. But not for others because of mild to several allergies. I have "The Soy Zone" by Barry Sears - it's a great book.

"The New Vegetarian Epicure" by Anna Thomas is a great book - really good recipes.

There are a growing number of vegetarian restaurants in major US cities. It's a great place to get ideas. Some of them will give you the recipes.

When not eating meat, I have used various nuts or cheese.

Take extra firm tofu, usually in a 12oz. package, pat dry, wrap in a paper towel and place something heavy on top of it. Not too heavy or you'll squish it. A plate with a mayo container will work. Leave it for about an hour. When done with this step slice to tofu in two.

Now, take any pre-packaged meat marinade you like. McCormick's makes some good ones. Marinade for about two hours. When cooking base the tofu with some of the reserve marinade.

Make sure the grill is cleaned and slightly oiled so the steaks don't stick.

Not really. Although I do like most soy based meat substitutes. I had grilled Tofu steak marinated in soy sauce and ginger last night.
And there are a lot of great variations. Whole Foods has some nice sauces for marinating.

Because tofu has a high water content, basting with a sauce works great on the grill after it has dried out a bit. But as you've probably discovered, keeping the tofu together can be challenging.

Chicken Salad with SA's

1c. Soy Addums
2c. water
1/2 c. Vegenaise
2 Celery stalks, minced
2 TB Bill's Best Chicken Seasoning
1/2 Sweet onion, minced
2 TB sweet relish, optional
salt to taste

Soak the soy addums in the 2 cups of water for 1 hour
Drain and pan fry until light brown and a bit crispy
When cooled, combine with the remaining ingredients
Chill and serve.

Makes about 4 cups of salad.

Personal note: Soy Addums come dehydrated in strips. I prefer the salad to be chopped so I place everything in the food processor and whirl it until the consistency that chicken salad should be.

I have had problems with cooking with tofu but I know it is good for you.

My husband is a meat and potatoes guy - it is taking work to convince him that we can have non meat meals! :)

PELAU

Ingredients
3 TBS olive oil
½ cup brown sugar
1 onion, chopped
1 clove garlic, minced
1 ½ cup pigeon peas, soaked overnight or substitute black-eyed peas
2 cups rice
3 cups water
1 cup Coconut milk
2 cups cubed fresh Hubbard squash
2 carrots, chopped
¼ cup chopped fresh parsley
1 tsp dried thyme
1 bunch scallions or green onion, chopped
¼ cup ketchup • 3 TBS butter

Directions
[FONT=&quot]Heat the oil in a heavy pot or skillet. With the heat on high, add the sugar and let it caramelize until it is almost burned, stirring constantly. Add onions, garlic and carrots and stir a few minutes. Reduce heat to medium, drain pigeon peas and add them to pot along with the rice, water, coconut milk, and remaining ingredients. Stir until mixed together, cover and cook until rice is soft. The pelau should be moist at the end of the cooking time.[/FONT]

Ingredients

4 cans of black beans
3 cloves of garlic
4 TBS fresh cilantro
2 TBS cumin seeds
2 of any of the following: Red, yellow, green, or grange bell peppers
1 Jalapeño pepper (optional)
1 of the following: Vidalia, red (Bermuda), yellow, or white onion or 1 bunch of scallions (green onions)
1 cup corn • 2 plum tomatoes, seeded
Pinch of sea salt
Pepper to taste
Squeeze of lime juice (optional)
1 ripe avocado


Directions

Chop onions and bell peppers and put aside. Finely chop the garlic, jalapeño pepper, and cilantro and place these aside too. Rinse and drain beans in a colander. Place the drained beans in a large serving bowl. Mix in all chopped vegetables, garlic, and cumin seeks and toss thoroughly with beans. Add salt and pepper to taste and toss again

KOSHERI (Lentils with Tangy Tomato Sauce)

Ingredients
2 cups uncooked brown rice
1 cup whole wheat pasta
1 pound lentils
2 TBS olive oil, divided
1 TBS crushed garlic
2 16-ounce cans of tomato sauce
½ cup water
½ cup apple cider vinegar
[FONT=&quot]1 medium onion[/FONT]

Directions
Cook rice according to directions. Rinse lentils and put them in a pot, covering them with water, and bring to a boil. Then simmer on low heat until almost all water is absorbed and lentils are well cooked. Add extra water if longer time is needed. To make the sauce, first sauté the garlic in 1 TBS oil until golden. Add both cans of tomato sauce and simmer 10-15 minutes. Add water and vinegar and bring to a boil. Remove from heat immediately and add salt to taste. Finally, slice onion in then, small pieces and sauté in remaining 1TBS oil until brown and crispy.


This dish should be arranged as a layer of lentils on bottom, followed by a layer of rice, then another layer of lentils and another layer of rice. Sprinkle the onions and the sauce on top before serving.
